Position Summary:
The Pastry Shift Leader is responsible for the day-to-day production of products, forecasting sales based on current and past sales, and maintaining a high-quality standard for all pastries and cakes. This leader is expected to motivate teamwork, foster a positive work environment, and carry out the core values of Wright’s Dairy Farm & Bakery.
Essential Duties and Responsibilities:
The essential functions include, but are not limited to the following:
- Write daily production lists based on guidelines, customer demand, and orders.
- Lead the pastry team by organizing work focusing on efficiencies and what the customer demand is based on current sales environment.
- Lead, Manage, and hold direct reports accountable. (LMA)
- Take an active role as part of the team in daily production including assembling, frosting, and decorating a wide variety of pastries and cakes to fill the store, custom and wholesale orders.
- Be a liaison between the retail staff and the finishing crew to maintain a flow of product availability and customer satisfaction.
- Forecasting production of product based on retail sales, customer demand, and shelf life.
- Communicate to Production Shift Leader necessary components to complete daily products and special orders.
- Direct interns and new staff when shadowing in the finishing department or completing a working interview/bench test.
- Oversee and help with cleaning and sanitizing of the room to maintain a clean and sanitized work area including tables, floor, mixers, and other equipment.
- Facilitate the daily huddle to be sure team is informed of important information and knows the plan for the day. Let manger know of any information that should be added to the huddle. Take an active role in weekly meetings.
- Advise leadership of any employee issues/problems and discuss the proper course of action
- Learn and use technology for scheduling, payroll, spreadsheets, and any other forms, checklists, and SOP.

Work Environment:
The work involves considerable exposure to airborne food particles and loud noises in a fast-paced environment with people working in close proximity.
Travel:
No travel is expected for this position.
Position type/ Expected Hours of Work:
This is a full-time position with an average of 35 and over hours. Typical work hours are 4:00AM to 12:00PM or 12:00 to 8:00 PM depending on workload, season, and customer demand. Weekdays, weekends, and holidays are required.

Reasonable accommodations may be made. The employee is required to stand for long periods of time. The employee is occasionally required to sit; climb; balance; stoop; kneel and crouch. The employee must frequently lift or move objects up to 25 pounds and occasionally lift or move objects up to 50 pounds. Specific vision requirements include close, distance, color, peripheral and depth perception with the ability to adjust focus.
Education, Certifications, and Licensure:
- High School diploma or GED required.
- 2 years of previous pastry production experience or pastry arts school
- Leadership/Manager roles or positions
