Essential Responsibilities:
- Thoughtfully plan and educate the wine program in a way that adds quality and value to enhance the guest experience, while sharing the mission.
- Advise and maintain continuous growth while keeping the wine list current on a weekly basis. Any updates to our wine list, including the point of sale (POS) system, the menu itself, and educational materials for the team, will be made promptly.
- Collaborate with the culinary team and beverage vendors to refine our wine pairings and maintain high standards.
- Collaborate with the events team on any wine-oriented series throughout the year.
- Develop and refine digital and physical tools to maintain continuous training in wine knowledge and acceptable dining service etiquette, such as consistent pre-service lessons, wine tastings, field trips, and purveyor site visits.
- Attend weekly CORE meetings with the leadership team to discuss venture goals and sales strategies, as well as how to achieve them. Report any front-of-house, wine, and team updates.
- Establish a monthly shift-lead meeting with Bar Lead and Guest Relations to stay current on venture-related projects.
- Establish and maintain positive and productive relationships with vendors and sales representatives, displaying decorum and respect following Gracie's mission and values.
- Spearhead beverage ordering, conduct monthly inventory in a tidy manner and organize the wine room and liquor room promptly.
- Assist in recruiting and interviewing FOH team members, while monitoring and communicating their training growth along the way, in tune with any compensation adjustments to review.
- Schedule the team appropriately and effectively two weeks in advance, and work with the Events Leader to determine future needs.
- Hold the FOH team accountable to all standards and practices, provide daily feedback and coaching moments, and evaluate and/or follow disciplinary procedures as outlined in the handbook.
- Participate in annual team member evaluations and all-hands front-of-house meetings scheduled.
- Develop and maintain acceptable dining standard operating procedures that are fluid and ever-evolving.
- Oversee the reservations with a strategic mindset.
- Ensure the dining room is maintained and cleaned to an excellent standard at all times.
- Organize and complete the administrative setup and breakdown of service (including but not limited to: the creation of floor plans, tip cashouts, cash closeouts, recording checkout reports etc.).
- Send Communications & Development Leader accurate payroll reports promptly.
- Act as a mentor to other sommeliers on the team regarding wine education and influence.
Education Requirements:
- 5 Years of experience in the hospitality industry, with 2 years in Beverage service
- Minimum Associate's degree from an accredited university in FOH Management, Food Service, or a similar field
- TIPS or Serv Safe Alcohol certification up to date
- Level 1 or + Sommelier Certificate or similar accreditation
